Getting our Greens: Day 3

Hi Friends!

Tonight I made a Strawberry Avocado Salad to go with our veggie burgers for dinner. I've been on a quest to turn the oven on as little as possible on these streak of warm days we've had. This salad is a great idea in theory although I would change a couple things. I liked the dressing but it was too sweet for me. I advise leaving out the honey and adding it in if you think the dressing needs extra sweetness or cut it in half. I used natural honey which may have made a difference too. It also seemed a little liquidy to me so I'd say go light on the olive oil and add it in when you're whisking. It's very tasty--try it out!

Strawberry Avocado Salad

I have served this countless times and I am always asked for the recipe, I also use this dressing on many other salads. Enjoy

Ingredients

  • 2 tablespoons white sugar
  • 2 tablespoons olive oil
  • 4 teaspoons honey
  • 1 tablespoon cider vinegar
  • 1 teaspoon lemon juice
  • 2 cups torn salad greens
  • 1 avocado - peeled, pitted and sliced
  • 10 strawberries, sliced
  • 1/2 cup chopped pecans

Directions

  1. In a small bowl, whisk together the sugar, olive oil, honey, vinegar, and lemon juice. Set aside.
  2. Place the salad greens in a pretty bowl, and top with sliced avocado and strawberries. Drizzle dressing over everything, then sprinkle with pecans. Refrigerate for up to 2 hours before serving, or serve immediately.
